College partner with highly acclaimed Chef, Brian Mellor

 

  • Cheshire College – South & West are proud to announce a new and exciting partnership with highly acclaimed Chef, Brian Mellor. 
  • Brian is working closely with various departments across the Colleges three sites, in Crewe, Ellesmere Port and Chester, including Hospitality and Catering, Construction and Media and Games.  
  • Learners have had the opportunity to work on live project briefs, including rejuvenating part of The Bolesworth Estate. 

  

Cheshire College – South & West are proud to announce a new and exciting partnership with highly acclaimed Chef and former hospitality and catering learner, Brian Mellor and Harthill Cookery School.  

Brian, founder of Harthill Cookery School, has always been an ambassador for the College, has experienced many aspects of the food industry. At 23 he was a sous chef in a hotel, before being head hunted to work for a multi-national company. He said the ‘’in house training was like nothing he had ever experienced’’ and was also seconded several times to Michelin starred establishments. From here he wanted to ensure other young chefs gained the teaching and development opportunities that he was privy to at an early age. 

Jordan Maxwell, 17, from Ellesmere Port, studying Level 2 Professional Cookery, has had the opportunity to work closely with Brian on several occasions during his time at College. Jordan said: ‘’My time at College has been really enjoyable and being able to work with top chefs like Brian Mellor has been incredible. 

‘’I have been selected to work on lots of projects with Brian, which is an honour. My highlight was when I got to cook live on stage with him at The Royal Cheshire Show last year. There was a crowd of around 60 people and Brian ensured we got to show off our talent and even congratulated us in front of everyone at the end.  

‘’Alongside Brian, my tutors Richard and Amy have always been supportive and inspired me to believe in myself. I won Student of the Year during my first-year studies and this massively increased my confidence. I couldn’t have done it without them.’’ 

The AA College Rosette Academy restaurants also work with a growing number of successful industry partners including Brunning and Price, Luke Thomas and The Little Food Company.  The links to industry provide excellent training opportunities for learners and supports the commercial element of the Academy’s business which plays an important part to the team’s overall success. 

Brian has not been restricted by his trade and is now working closely with various other departments across the Colleges three sites, in Crewe, Ellesmere Port and Chester, including Construction and Media and Games, to provide live project briefs. 

Our construction learners recently visited Harthill Cookery School to rejuvenate some of the surrounding land, a project which Brian set up with The Bolesworth Estate, who provided all materials. This provided learners with hands-on experience as part of teaching and learning sessions as well as valuable, practical involvement.  

Mitchell Day, 19, former learner at Bishop’s Heber High School, has been working alongside peers and Lecturer in Games and Media, Craig Murray-Fletcher, to document Brian’s journey with the College in a series of photographs. They kicked things off at Academy West’s first Gourmet Evening, an event which Brian was leading. 

Mitchell said: ‘’I am excited to be working with Brian, he is really inspirational. I want to pursue a career in the film industry and Brian has given me the opportunity to work on live projects, which is helping develop my skills.

‘’I love finding and exploring new things. College has helped me learn new ways to approach this and my tutors are always encouraging and supportive of new ideas.’’ 

Brian Mellor commented: ‘’I studied at the College and have always tried to keep in touch, work with and hopefully inspire the current learners.  

‘’To have that link now made official is both humbling and inspiring to me at the same time. The College is active and vibrant, and the partnership spurs me on to continue seeking out interesting experiences for our learners.’’ 

Mark Parsons, Assistant Principal Curriculum, said: ‘’It is a true privilege to have partnered with Brian. 

‘’We are incredibly grateful to him giving up his time in order to support, teach and develop our learners. It really is an invaluable experience for them and we are overjoyed to announce his work with other departments. 

‘’I look forward to continuing our work with Brian and I am excited to see how the partnership develops.’’
